spinach was on sale this week. so i have a lot of it!
i didn’t quite get enough of my pesto-fill with my lemon-kissed spinach and quinoa pesto, so today for lunch i decided to try another version of pesto, this time adding roasted red peppers and anchovy paste.
as i pulse pureed the pesto i thought to myself, “this looks a lot like a twinkling christmas tree!” which of course prompted me to pop in elf and snuggle up with rudy tooty.
